Today, I am posting the second version of Apun Ka Karahi recipe. In my first version, I just followed the Shan masala box recipe. Whereas, in this 2.0 VERSION! I am following a chicken Karahi recipe that’s my mom!! Check out more food recipes at her blog –> https://cookingwithseema.ca/

Ingredients:
- 3 lbs mixed chicken
- 4 tbsp ghee (clarified butter)
- 5 garlic cloves, chopped
- 1 tbsp salt or salt to taste
- 1 tbsp cumin seeds
- 2 bay leaf
- 3 tomatoes cut in half
- 2 chopped onions
- 1 tsp ground black pepper
- 1/4 tsp turmeric
- 1 tbsp coriander powder
- 1 tbsp red chili powder
- 1 tsp garam masala powder
- 1 inch whole cinnamon
- 7 cardamom
- 3 tbsp yogurt
- 2-3 chopped green chilies
- 1 inch piece of ginger
- 2 tbsp chopped coriander leaves
Preparation:
- Wash then dry chicken pieces with paper towel to remove any water
- Heat pan on high heat
- Add ghee to hot pan
- Add garlic cloves, salt, cumin seeds, cinnamon and bay leaf
- Add chicken with chopped onions
- Stir occasionally until chicken pieces are browning, try to get a golden colour (around 10 minutes)
- Chop the tomatoes in half and add to center of the pan
- Add the ground black pepper, red chili powder, turmeric, garam masala and coriander powder
- Cover pan, reduce heat to medium-low and cook for over 15 minutes until meat is tender and tomatoes are cooked through
- Remove lid and peel off the tomato skin
- Add julienned ginger, green chilies and chopped coriander leaves
- Increase heat to high
- Add yogurt and stir and cook until the oil is released (approx. 12-15 minutes)
